How to deal with attachments

Are there any instructional links how to deal with
attachments when you are set up for plain in line text
American Standard Code for Information Interchange
ASCII ?...

For example:
.XLS to plain text
.tiff to plain text

Especially useful would be web sites where you can
send in what needs converting and the plain text
is returned !

on an Apple iMac OS 8.6 computer
