I have actually integrated Omeka is my course LIS654, "Building
Digital Libaries". The learning material and student work are available

That's what I have done for my students. Each student
gets her own omeka installation and mySQL database. My
(root user) script to run this is at
http://openlib.org/home/krichel/courses/lis654/bin/maintain_omeka
Student can install themes and plugins, even change the source code
of Omeka at will.
