Hopefully, you are aware of the excellent OpenSource CMS website
http://www.opensourcecms.com/  . They run demo versions of CMS systems
that allow you to get under the hood of both the public and
administrative sides of the software. There is some user rating and
review functionality on site too to help you better form an impression
of the systems.

The criteria for inclusion on the site is that the CMS system must use
Apache, MySQL, and PHP. Perl or python systems are excluded. They are
mostly opensource systems (I think there might be a couple differently
licensed systems included). Therefore EZpublish, mambo, xoops are
there but Zope, (including CMF and Plone), since it is python-based,
is not. BTW, I've used Zope -- pretty interesting approach to CMS. We
use it on our intranet.

They also include bulletin board/forum software (such as phpBB) and
wikis as long as they use PHP and MySQL.
