Yes, this is fairly easy to do.  A company called Axialis
(http://www.axialis.com) makes a shareware icon editor called AX Icons.
It's intended for creating or editing icons, and can also be used for
extracting the icon image itself.

An example - to get the Word icon you would navigate to and open the
winword.exe file in AX Icons, where you would see all the application and
document icons associated the with the app.  Just open the one you want,
copy it, then paste into your image editor.  It's that easy! If an app. has
different-sized icons (e.g. 16x16, 32x32, etc..) they will also be
available.
