We use Foolproof on the ~30 Macs in our Lab. It works reasonably
well, redirecting file saves (including Netscape caching) to either a
floppy disk or a User folder set up for the purpose. It's relatively
simple, but has enough configurability for our purposes. And we don't
get as many confused students as I feared we would.
We do not have anything set up yet on the PC side.
