What about creating a webpage on your website that is only linked to by
an icon on the laptop's desktop?  This way, whenever the teacher wants
to update the information, they can do so by updating the webpage and
the changes will automatically be reflected as the desktop link will go
to the webpage.  You could also do a restricted access wiki, for that
matter if you wanted to play with that kind of technology.  Hope this
gives you something to start brainstorming with :)

Additional idea:  If it's just a series of links, if you can't create a
public or protected website as noted above, could you use del.icio.us to
store them and make them public?  Then you could provide a link to them
from your website or one of Katie's options above?  DeepFreeze can also
be set to *not* wipe certain things, but that's usually a whole drive
(?? - it's been a while and I don't remember what level of granularity
it offers for bypassing wipe).  If you could house the link and/or list
in a protected space, it would then be available after wiping.
